By far one of the greatest experiences. For me it was like being in Wonderland, carefully guided by the brilliant entore Casa Timis team. It was a great journey of brilliant culinary, wine tasting, outside fire, music, etc. Everything in from a fairytale and the destination is the perfect place to completly disconnect from the day to day issues and reconnect with yourself. One of the most beautiful places in Romania, and I've been to some of them... The rooms are so nicely decorated, hand painted with nature scenes, they paint attention to every little detail and everything fits together in a non-obvious way. Luckily, no marble and gold chandeliers, but a lot of heart they've put in everything. The restaurant was excellent, they adjusted quickly to my non-salt menu, the SPA is... you must go and try, then speak later :).

Casa Timis is the brainchild of designer, entrepreneur and all round super-girl Cristina Timis who has created five star earth houses set in the rolling vine clad Carpathian foothills. The design is as ingenious as it is stylish combining Provençal elements with English country cottage chic and a splash of Scottish tartan for good measure. Sheets, pillows, mattress are the absolute best and it was very hard to get up the next day, lying in bed was like reclining in a huge feathery hug. Outside there is the obligatory infinity pool and jacuzzi where you can enjoy a lavender gin and tonic (apparently all the estate is purple with it in the spring) and watch the sun set across the plains below, The food is absolutely off the charts and would, in my humble opinion, be worthy of a Michelin star should the Romanian government see fit to get them over to do a guide here. This is largely thanks to the efforts of celebrated master chef Nico Lontras who has taken Romanian cuisine to a whole other level. We had one evening in his Mediterranean style restaurant feasting on fresh oysters, plus stunning seafood extravaganza with soft and succulent octopus, scallops with garlic and chilli, clams, mussels and a smorgasbord of sauces to choose from. Being a winery as well Casa Timis also provides impressive wine pairings as part of the dining experience. There is also a new Asian fusion restaurant in the gardens which we visited the next day for some of the best blue fin tuna sushi I have ever eaten with real wasabi, washed down with a very decent cup or three of sake. If all of this sounds exhausting then I can recommend the luxury spa where I received a deep tissue but more importantly a Siberian belly massage which helped greatly in counteracting the effects of two days of rampant overindulgence! I can hugely recommend Casa Timis, it’s one of the best resort hotels in Europe and a great starting point from which to explore the wilds of Transylvania, the Carpathian Mountains and beyond.
