Paco (real name Francisco Tej***) (Gdpr). I have had to visit Manchester every 3 months for a week, for the last 4 years (except during covid) and Paco has been the chef I spoke to most mornings for breakfast. What a genuine guy, nice polite and always cheery on shift. Always had the time to have a quick chat over nothing in particular, but fab customer service. 👌 He always recognised me when I visited Manchester and asked how I am, etc. He is not necessarily front of house, but I think he should be recognised for his efforts and how he balances and runs the kitchen. From someone that works as a senior leader in the food/hospitality industry I know that front of house staff are often recognised and not so much behind the counter, so please can the management team recognise such a valuable employee.
