I would walk the Corniche. It is beautiful and there are coffee shops along the way where you can take a break while enjoying the view. You might also enjoy the market place. There are restaurants there or food stands. I imagine you would be able to fit both into your layover. I didn’t visit the museums but hear they are really interesting.

Doha Corniche كورنيش الدوحة Doha Binhai Avenue (Arabic: ك בר״ নালা) is a seaside promenade in Doha, Qatar's capital, extending 7 kilometers (4.3 miles) along the Doha Bay. Every year, Qatar National Day, National Sports Day and other national festivals are celebrated with Doha Binhai Avenue as the center. The Binhai Road is divided into three main areas: Binhai Park and Promenade, Binhai Street and Government District.
A road with a good view. First of all, you can see the city skyline on the other side from a distance. Master Mei's masterpiece Qatar Art Museum is also on the seaside road. Secondly, you can run along the seaside at night to enjoy the night view of the city.
Pretty enough waterfront area of Doha. Almost like something you would see in a place like Singapore, but nothing really spectacular.

Doha Corniche is an eye candy. This place is soothing, you can spend hours delighted with the view of bright & tall high end buildings which range from hotels, restaurants to offices.
